Recipes for Thanksgiving Leftovers: Avoid Over-Turkification    Back to the homepage

Since I am hosting only five people at Thanksgiving this year, CookingLights recipes for Thanksgiving leftovers (Nov. 2007, p 244) will save me from my own refrigerator. I am almost excited for the extra 11 pounds of roasted turkey Ill have in store for the rest of the month. I am particularly looking forward to trying out the mashed potato cakes and Turkey Pho. The key to CLs recipes for Thanksgiving leftovers is to shoot for different ethnic flavors for your fowl (think turkey tacos). I have a real imagination gap in this area because growing up, my moms single recipe for Thanksgiving leftovers was a dish called Turkey Deluxe, an overcooked S.O.S.-type dish that we seemed to keep eating until New Years. Inspired by CLs recipes for Thanksgiving leftovers, I am thinking about turkey enchiladas, turkey chili, and turkey curry. The only problem with these recipes for Thanksgiving leftovers is that they have a tendency toward the miracle of loaves and fishes and can expand the amount of food available, so I may be eating Turkey Pho until Valentines Day. I think I can deal.
